Turkish Pide

Turkish Pide Turkish pide is one of the most popular bakery products you can see in bakeries, restuarants and stores around Turkey..There are variety of filling options you can experiment with..Here I am showing you chicken filling. Ingredients for the pide: 6 n half cup of all purpose flour One cup lukewarm water One tbsp instant yeast One cup warm milk One tbsp granulated sugar 3-4 tbsp olive oil One tsp salt Instructions:  Mix everything in a big bowl ,you will get a sticky dough add little more water if you need. Work on the dough for ten minutes untill u get a smooth dough..place in a big bowl  and spray some olive on top..cover and let it rise for an hour.. Mutton Trotters (paya)

Mutton Trotters Mutton trotters or Paya Curry (paya is a urdu word for trotters) is a thick broth prepared with trotters and whole    spices It's traditionally cooked on slow flame overnight or for few hours which makes the curry  thick and flavourful. In India and pakistan  they usually have this for breakfast with tandoori naan aur buns. Its like a treat for us since childhood.My mom used to make such yummy paya curry. Ingredients Paya 4(trotters) Oil 4 tbsp Salt to taste One stick cinnamon  One big  black cardamom 2 green cardamom 3 bay leaves 2 onions sliced 2 tbsp ginger garlic paste One tbsp corrainder pwd 1/2 tsp turmeric powder One tbsp chilli powder One tsp cumin pwd One tsp garam masala pwd 1/2 cup dahi Method:wash the paya properly .In a pressure cooker add oil n whole spices..then add onions and fry till onions changes color to light brown(don't make it too brown). Spicy soya chunks This is a very easy and tasty recipe..Soyabean is a good source of protien,so a good dish for vegetarians to include in there menu..There are many varieties You can make by these soyabean chunks...For this recipe I am using mini chunks. So let's get into the recipe..you will need Ingredients: Soyabean chunks 100gm One big onion (sliced and fried ) One tomato chopped Curd 1/2 cup 3-4 garlic pods 1/2 inch ginger 3 green chillies 1/2 tsp turmeric powder 1 tsp red chilli powder 1/2 tsp garam masala powder 1/2 tsp dhania(corrainder) powder Salt to taste. Method: Boil water add little salt and boil the soya chunks..Strain n let it cool..Then in a frying pan add 2 tsp oil and toss the chunks to give it a crisp.keep aside In a kadai add 2 tbsp oil,add ginger garlic and green chillies paste,saute and in the fried onions and tomatoes mix all well..Then add in all the spices and saute it nicely..Once the Masala is done and oil start

Russian cutlets These chicken cutlets spiced meat croquettes..Also known as Russian cutlets or kebab..A meledy of meat,potatoes and mashed veggies make these cutlets very tasty..It's a must have for our family in Ramadan and dinner parties.. Ingredients; Chicken 500gm boneless 400gm grated potatoes 200gm grated carrots 100gm French beans 100 gm green peas 2 tbsp ginger garlic paste 2 tbsp green chillies finely chopped All purpose flour 2 tsp Salt to taste 1 tbsp white vinegar Half cup chopped corrainder leaves Eggs 2  Bread crumbs. Method: As you see in the above picture..You have to grate potatoes and carrot,add finely chopped beans and peas(u can use fresh or frozen).. Mix all the veggies together and pressure cook it for just one or two whistles..You don't have to over cook them.. SPICY KHEEMA SAMOSA

Spicy kheema Samosa Samosa is an all time favourite snack for Indians and many around the globe..This is a family recipe passed on by my mom in law..A very simple yet tasty recipe...These can be made and stored in freezer for 2 weeks...The spicy kheema,freshness of mint leaves and the crunch of onions make it irresistible.. Ingredients: Kheema(minced meat)500gm Green chillies chopped 3tbsp Ginger garlic paste 2tbsp Salt as per taste Turmeric 1/2 tsp Onions 3 medium chopped Mint leaves(pudina) one cup chopped.. Instructions: In a wok add one tbsp oil,add in the kheema,ginger garlic paste,green chillies,salt and turmeric.. Saute nicely till the water reduces and the mixture is all dried..There should not be any moisture left.. Cool the mixture completely..Then add in mint leaves and onions mix well..You are good to go..Just fill in the samosa,deep fry and enjoy ... Chicken Shawarma This is a Mediterranean roll or wrap made of pita bread filled with sliced grilled meat  or chicken topped with lots of veggies and a specially made sauce. For the pita bread you will need: 3cups flour 3tsp sugar 3,tsp yeast One n half tsp salt Water Oil for kneading and coating. In the flour add Everthing except oil and start making dough adding little water as you need..once it forms a ball...add oil and knead for 5 mins..cover n keep for an hr to proof..make pita breads out of this as u make rotis.. Ingredients for chicken marination: For the chicken 1 kg boneless  2tbsp dahi One n half tsp salt One n half tsp garlic pwd 1tsp dhania pwd 1tsp jeera pwd 1tsp black pepper pwd 1tsp paprika 1tsp chilli pwd 1/3tsp cinnamon pwd 1tsp mustard paste 2tbsp oil Add the above ingredients and marinate the chicken for an hr Lightly brush the pan with oil and cook the chicken on medium until done.. MOONG ALOO TIKKI CHAAT

Moong Aloo tikki chaat This is a snack originated from northern sub-continent;in North India,pakistan and Bangladesh..It's made out of boiled potatoes,whole moong and spices..A famous Indian street food.. This snack can be enjoyed any time of the year,but preferably in summers and monsoon.So lets get into the recipe.... Ingredients: 4 boiled potatoes Half cup boiled whole moong 2 tsp green chillies One medium sized onion chopped Half cup corrainder leaves Yogurt (dahi)2 cups Salt to taste Method: In a big bowl add in potatoes,moong,oinons,chillies,salt and mix it well.Make tikkis and grill them on tawa with dash of oil.. The tikkis are ready to plate..In yogurt and salt and sugar and beat it nicely...Pour the yogurt mix on top of the tikkis,sprinkle chilli powder,cumin powder, corrainder leaves..Serve it chill...
