Chicken Shawarma

This is a Mediterranean roll or wrap made of pita bread filled with sliced grilled meat  or chicken topped with lots of veggies and a specially made sauce.

For the pita bread you will need:

3cups flour
3tsp sugar
3,tsp yeast
One n half tsp salt
Water
Oil for kneading and coating.
In the flour add Everthing except oil and start making dough adding little water as you need..once it forms a ball...add oil and knead for 5 mins..cover n keep for an hr to proof..make pita breads out of this as u make rotis..

Ingredients for chicken marination:

For the chicken
1 kg boneless 
2tbsp dahi
One n half tsp salt
One n half tsp garlic pwd
1tsp dhania pwd
1tsp jeera pwd
1tsp black pepper pwd
1tsp paprika
1tsp chilli pwd
1/3tsp cinnamon pwd
1tsp mustard paste
2tbsp oil
Add the above ingredients and marinate the chicken for an hr
Lightly brush the pan with oil and cook the chicken on medium until done..


Ingredients for the sauce:

One cup yogurt
One cucumber
One lemon
2 cloves garlic
Half tsp salt
Method:
Put the yogurt in a muslin cloth and remove excess water..
For the cucumber cut and remove seeds,just give it a blend and put tht too in muslin cloth
In a bowl add hung curd,cumcumber,salt,crushed garlic and juice of a lemon...mix


Now take a pita bread arrange chicken and veggies (capsicum, cucumber, etc)and top it up with sauce..roll and serve hot

Mutton Trotters (paya)

Mutton Trotters Mutton trotters or Paya Curry (paya is a urdu word for trotters) is a thick broth prepared with trotters and whole    spices It's traditionally cooked on slow flame overnight or for few hours which makes the curry  thick and flavourful. In India and pakistan  they usually have this for breakfast with tandoori naan aur buns. Its like a treat for us since childhood.My mom used to make such yummy paya curry. Ingredients Paya 4(trotters) Oil 4 tbsp Salt to taste One stick cinnamon  One big  black cardamom 2 green cardamom 3 bay leaves 2 onions sliced 2 tbsp ginger garlic paste One tbsp corrainder pwd 1/2 tsp turmeric powder One tbsp chilli powder One tsp cumin pwd One tsp garam masala pwd 1/2 cup dahi Method:wash the paya properly .In a pressure cooker add oil n whole spices..then add onions and fry till onions changes color to light brown(don't make it too brown). Spicy soya chunks

Spicy soya chunks This is a very easy and tasty recipe..Soyabean is a good source of protien,so a good dish for vegetarians to include in there menu..There are many varieties You can make by these soyabean chunks...For this recipe I am using mini chunks. So let's get into the recipe..you will need Ingredients: Soyabean chunks 100gm One big onion (sliced and fried ) One tomato chopped Curd 1/2 cup 3-4 garlic pods 1/2 inch ginger 3 green chillies 1/2 tsp turmeric powder 1 tsp red chilli powder 1/2 tsp garam masala powder 1/2 tsp dhania(corrainder) powder Salt to taste. Method: Boil water add little salt and boil the soya chunks..Strain n let it cool..Then in a frying pan add 2 tsp oil and toss the chunks to give it a crisp.keep aside In a kadai add 2 tbsp oil,add ginger garlic and green chillies paste,saute and in the fried onions and tomatoes mix all well..Then add in all the spices and saute it nicely..Once the Masala is done and oil start...
