Russian cutlets

These chicken cutlets spiced meat croquettes..Also known as Russian cutlets or kebab..A meledy of meat,potatoes and mashed veggies make these cutlets very tasty..It's a must have for our family in Ramadan and dinner parties..

Ingredients;

Chicken 500gm boneless
400gm grated potatoes
200gm grated carrots
100gm French beans
100 gm green peas
2 tbsp ginger garlic paste
2 tbsp green chillies finely chopped
All purpose flour 2 tsp
Salt to taste
1 tbsp white vinegar
Half cup chopped corrainder leaves
Eggs 2 
Bread crumbs.


Method:

As you see in the above picture..You have to grate potatoes and carrot,add finely chopped beans and peas(u can use fresh or frozen).. Mix all the veggies together and pressure cook it for just one or two whistles..You don't have to over cook them..
Now in a wok Add 2 tbsp oil,add in the green chillies and ginger garlic paste..saute for two minutes.Then add the veegies and mix nicely..Add boiled and shredded chicken to this mixture,add salt and  mix..Saute for 5 mins or until the mixture looks dry..Make a slurry of all purpose flour and water and add to this mixture..

The mixture should look like this...Lastly add corrainder leaves and 1 tbsp white vinegar(u can squeeze half a lemon also).
Make cutlets of any shape you like round or oval..I usually prefer oval shape..Dip in beaten egg,roll in bread crumbs and deep fry..

Mutton Trotters (paya)

Mutton Trotters Mutton trotters or Paya Curry (paya is a urdu word for trotters) is a thick broth prepared with trotters and whole    spices It's traditionally cooked on slow flame overnight or for few hours which makes the curry  thick and flavourful. In India and pakistan  they usually have this for breakfast with tandoori naan aur buns. Its like a treat for us since childhood.My mom used to make such yummy paya curry. Spicy soya chunks

Spicy soya chunks This is a very easy and tasty recipe..Soyabean is a good source of protien,so a good dish for vegetarians to include in there menu..There are many varieties You can make by these soyabean chunks...For this recipe I am using mini chunks. So let's get into the recipe..you will need Ingredients: Soyabean chunks 100gm One big onion (sliced and fried ) One tomato chopped Curd 1/2 cup 3-4 garlic pods 1/2 inch ginger 3 green chillies 1/2 tsp turmeric powder 1 tsp red chilli powder 1/2 tsp garam masala powder 1/2 tsp dhania(corrainder) powder Salt to taste. Method: Boil water add little salt and boil the soya chunks..Strain n let it cool..Then in a frying pan add 2 tsp oil and toss the chunks to give it a crisp.keep aside In a kadai add 2 tbsp oil,add ginger garlic and green chillies paste,saute and in the fried onions and tomatoes mix all well..Then add in all the spices and saute it nicely..Once the Masala is done and oil start...
